When I first heard about red velvet pancakes I thought, "Yuck"! As you can see, I had a change of heart. I decided to give it a go all in the name of love and the month of love. There's just a special place in my heart for festive foods!
They were nothing like I expected. I thought they would be a steaming hot, sweet mess. To my surprise it was like regular pancakes infused with red velvet cake. The best part was the cream cheese glaze. De.li.cious!
- Ingredients:
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 2 tbsp sugar
- 2 tbsp unsweetened cocoa powder
- 1 egg
- 3/4 cup buttermilk
- 1/4 cup sour cream
- 1 tsp pure vanilla extract
- 1 tsp red food coloring
- 3 tbsp melted butter
- Cream Cheese Glaze:
- 4 oz cream cheese- softened
- 1 tbsp pure maple syrup
- 1 tbsp corn syrup
- 2 to 3 tbsp confectioners sugar
- 2 to 3 tbsp whole milk
- Optional Garnishes:
- pecans
- confectioners sugar
